we made pistachio chocolate chip cookies yesterday. somehow this picture doesn't quite capture their boogerish tint. take a bite in one though and there's no denying that it is indeed green. for that reason, they were a hit with the six and four-year-olds. the flavor was definitely interesting for me. don't let me kid you, i've eaten plenty. as far as texture goes they are amazing though. those tricky little things! i am thinking i won't make them again until halloween and maybe drop in a teensy bit of food coloring to up the green factor. a funny little after school snack perhaps.
all i did was change up a few ingredients from my favorite ever chocolate chip cookie recipe. i should give recipe credit here, but i can't remember where in the world i got it from. i'll give you the original and then tell you what changes i made for yesterday's experiment.
The World's Best Chewy Choco Chip Cookies...EVER!
4 3/4 C. flour
2 tsp. baking soda
2 C. softened butter (not melted)
1/2 C. granulated sugar
1 1/2 C. packed brown sugar
2 packages vanilla instant pudding
4 eggs
2 tsp. vanilla
4 C. semi-sweet chocolate chips
{all i did was substitute pistachio pudding mix for the vanilla pudding mix and instead of 2 tsp. of vanilla i did 1 tsp. vanilla and 1 tsp. almond extract.}
1- heat oven to 350. in small bowl combine flour and baking soda and set aside.
2-in large bowl, cream together softened butter and sugars. mix in pudding mix until just combined and then beat in eggs and vanilla.
3-add dry ingredients and mix well. stir in the chocolate chips until evenly distributed.
4-drop in spoonfuls on ungreased baking sheet and bake for 10-12 minutes. cookies should be lightly browned on top.
let cool and eat as many as you can before they disappear!
if pistachio isn't your thing, i suggest you at least give the classic chocolate chips a try. you will not be disappointed!
